Frozen and Bottled Items
Garth and Marilyn alternate tomato juice and bottled tomatoes from year to year. This year is juice. Garth has bottled over 55 quarts of tomato juice so far. He will be bottling more juice before he is through.
Marilyn said they drink the tomato juice as well as use it in spaghetti sauce, soups or with beans and vegetables. She said she makes a soup with Raman noodles, canned beef (or crumbled cooked ground beef), shredded cabbage, carrots and the juice. She said the tomato juice really makes this tasty.
Garth has already harvested the majority of his corn. He said that he has frozen 55 pints of corn. The few ears of corn that are still growing will be for them to eat fresh.
Marilyn said they also have 2 gallons of dried crookneck squash. This will be used in soups, stews, casseroles, potatoes au gratin etc.
They also have their banana squash left to harvest. This will be peeled and blanched then seasoned and sealed in plastic and frozen. Some of it will be mashed and this year they may try cubing some of it to see how it works.
